CUCUMBERS WITH GOAT CHEESE AND DILL

Serving 6

2 large cucumbers

2 ounces goat cheese

Fresh dill, to taste

Wash cucumbers and pat dry.

Peel cucumber, if preferred. Slice into ½-inch-thick rounds and add 1−2 teaspoons of goat cheese to each slice. Sprinkle with fresh dill, cover and refrigerate until serving.
